For the cold brew, you are selectively extracting compounds that are only soluble at lower temperatures, so it removes the acidity. The cold-brew method really alters coffee’s chemical characteristics.
If you are impatient and wanted a quick coffee, stick with hot-brew method. Anyway its a brew-iful coffee.
